Dear wine lovers,
**Situated in the heart of Burgundy, among this myriad of small villages which you enjoy crossing while driving from Beaune to Dijon, there is located a typical one : Pernand-Vergelesses**.
In fact, this village hosts three controlled appellations : Corton Charlemagne white Grand Cru, Corton red Grand Cru and Pernand-Vergelesses white or red which can also be 1er Cru. Since I know how frustrating it can be to understand all those appellations, I will only concentrate to the one I think has the best quality / price ratio : White Pernand-Vergelesses.
Elaborated from 100% Chardonnay often planted inside those famous Burgundy "Clos", this wine develops classical hints of exotic fruits when it is young and then evolves to a more complex style where vanilla, butter and honey delicately enchant your nose and palate. That's when I prefer them and I would then pair with this very simple salty butter scallop recipe***.
Domaine Antonin Guyon also vine-owner throughout most of Burgundy, Chanson Père et Fils, Domaine Chandon de Briailles or Domaine Laleure-Piot have in common quality, regularity and family spirit so revealing of this region. And since these wines are not the most well-known, you might find fair prices, provided your preferred wine shop has some in stock. Otherwise, you might have to hunt for them in France which will also permit you to understand better this local saying : "Pernand je bois...verre je laisse".

If you are looking for a great book to understand better Burgundy and all the controlled appellation system, here is my advice :
***Salty butter scallop recipe :
Ingredients for 8 people :
8 pounds sea scallops
2 cup fine dry unseasoned bread crumbs
1 cup salty butter
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Paprika
2 tablespoon fresh chopped parsley
Preparation :
Roll scallops in bread crumbs. Melt half of salty butter in skillet over medium low heat. Add salt, pepper and paprika. Add scallops and saute slowly for 7 to 9 minutes, or until they turn golden brown.
Put remaining butter, parsley, heat and pour over scallops.
Serve with rice.
